Right now I use ground black pepper, garlic powder, onion powder, mustard seed, smoked paprika, oregano, red pepper flakes, cayenne powder. Salt it when it's resting.

San Marzano are tomatoes that are , unlike Roma, more sweet and with less water content which makes them suitable for sauces, and naturally is better than ketchup but you can mix it as well. Old school pizza Napolitana almost exclusively has them.
