I keep 100% dark chocolate on my desk at work. People have learned not to steal it. I can tell from the look on their faces as soon as it goes in their mouths. Personally, I love it though.

On topic, it doesn't matter in which order the bitterness appears in you. Once it's there it permeates, and it doesn't let you go. It stains every part of you.
