I went to the grocery store today and this Turkish security guy was following in the store me for quite a bit (I already knew he didn't trust me) Later at the checkout he looked angry at me, and later when I payed he looked into my backpack if there wasn't anything I stole. I said "You don't trust me, don't you?" Then he laughed "we always do this for security measures" No you don't lmao.

Second time I went to another store today and the workers were checking behind me and really observing me. When I walked away they opened the self-scan checkout to receive the receipt to see what I bought and to see if I scanned everything.

Apparently, Dutch law differs somewhat from German law.
As far as I know, a security faggot like that is only allowed to detain you. Even if he has strong suspicions or has observed you.
He's not a cop, after all, and only they have the authority to search your bags, etc.
