Depending on what you mean by "hack." To gain complete control would be very difficult as they have many mitigations. Unlike regular corporate networks, there is actually a lot of emphasis on security when it comes to self driving cars due to the dangers involved. An extremely talented hacker (or more realistically group of hackers) may be able to do it, but only after a ton of research and practice. The most advanced attackers (CIA, NSA, etc) will be able to do it, but for other less advanced hackers, it will be very hard.

To "trick" it would be easier. There was a method where certain markings were applied to stop signs that causes it to mistaken it for a protest sign and ignore it.
