For example medieval archers had longer Bow arms than draw arms, because they carried their 45lb bows all day from childhood to adulthood.

You can’t do the same with the jaw without breaking your teeth but it’s hypothetically possible (possible in theory). And no, mewing doesn’t work.

I don't think it's completely genetics. I think that the hardness of foods determine the growth of your jaw. For example, my jaw is asymmetrical because I've been chewing on my right side for most of my life. Because of that, the right side of my chin is slightly more protruding than my left, and my right cheekbone is bigger than my left. So I definitely would say that chewing plays a role in the development of our facial structures.
