I've played Being a Dik. I used to love visual novels but after a while I found myself just spamming the spacebar button until the option for a sex scene would occur.

Yes, the game is mostly static but you do get animations during sex scenes which both of those games have plenty of.

Out of this list, I'd probably recommend planetarian and steins;gate for the absolute beginners tbh. The others have a barrier to entry that might be too much for newnigs.
Hmm... I'd maybe recommend the baldr sky series too after planetarian and steins;gate. But baldr sky dive 1 (the first vn in the duology) is slow and repetitive by being completely inundated with a litany of backtracks and flashbacks. However, the crescendo in baldr sky dive 2 is pretty good and makes it worth it.
If you like the cyberpunk and mecha genres and are a fan of books like neuromancer (which it took heavy creative inspiration from) then it is definitely worth checking out. It also has gameplay too which is a "plus" but it's not all that great, tbh.
Should I stick with umineko or drop it? It’s really not living up to my expectations since it’s such a slog to get through (I’m halfway through episode 5). I really have to get through my backlog.
Used to play a lot of them when i was younger as a teen.
