from my humble experience, Saya no Uta, White Album 2, Muramasa, Tokyo Necro, Tsukihime, the Muv Luv Triology are all classics
but if it's dating sim in the sense where it's less plot-heavy and focused on romance i'd say grisaia no kajitsu, hoshizora no memoria, chrono clock, café stella, or anything by yuzusoft
