The Ancient Greeks referred to Persians as having light-skin, and Ethiopians as having burnt-black skin, and the Greeks referred to themselves as being "tanned from the Sun".
This is why modern day Greeks aren't considered white.
Greeks as a whole, in no point in history, in any era, over thousands of years ever referred to themselves as white, but historical data shows Greeks referring to Persians a having a lighter skin tone.
The Persians you movies look more like Arabs.
I'm not denying what you are saying, many Greeks can pass as Arab or any other MENA country, but at the same time there are Greeks who can pass as full white. The same goes for Italians, many Italians from the north are just average white people while those from the south like in Sicily can pass as MENA.
Northern Italians and Northern Greeks are white-looking, Southern Italian and Southern Greeks are more tanned-looking.
But you also have Greeks like Pontian Greeks who moved from mainland Greece to the Black-sea/Anatolia around 800 BC, those Greeks ended up more pale-looking, they all ended up back in Greece after the Ottoman Turks kicked them out after they had been in the region for the previous 2000 years before the Ottomans arrived.
