Nobody generally seems to give a shit about The Winter Olympics especially relative to the Summer Olympics. I'll admit that I'll on average watch far more of the Summer Olympics than the Winter Olymipcs but I will watch at least some of both.

The only real difference between 'rich people' sports and 'poor people' sports is accessibility, stereotypically commoner's sports such as football (soccer to you), basketball etc. are sports that everyone has access to, children in Ghanian mud huts and Brazilian favelas who lack food security will still grow up worshipping football as though it's a religion.
Contrast that with polo, which requires equipment that the average joe either doesn't have access to or can't afford (I don't know anyone personally who owns a horse). The only people who grow up playing or paying attention those sports are rich people which is why they tend to be the only ones that ever become professionals in the sport.
This is also why I believe tennis and badminton are falsely categorised as sports for 'rich people'.
Badminton isn't a rich sport. It's most popular in shithole SE Asia.
Tennis is among sports where you need to start really early in childhood to be good (there's the rare exception like Jannik Sinner, but those grow up playing other various sports), so that effectively makes it a rich parents necessity sport.
But, I agree with your point that equipment and court access isn't that much of a hindrance.
