I mean, I would define White as "belonging to the people of Europe, to the civilization they built, to its habits of order, discipline, and achievement." By that definition, Jews are not White. Genetically, Ashkenazi Jews in particular are a mix of Levantine ancestry with some Southern and Eastern European admixture, but they remain distinct from Europeans. When you look at population genetics, they consistently cluster together and apart from Whites. That is why they are treated as their own ethnoreligious group with roots in the Middle East, not just another type of European.
And importantly, Jews themselves rarely consider themselves White except when it is useful. They call themselves Jewish first, and only adopt Whiteness conditionally, depending on the context. Here is something a Jew wrote about this exact question:
