I don’t like veggies in general tbh
Veggies are full of essential vitamins and nutrients that are necessary for our health and well-being. Pickled vegetables are particularly beneficial because the fermentation process helps preserve the natural probiotics found in them. You are missing out.

It's hard to pick a favorite because there are so many delicious veggies to choose from but if I had to choose, I would say my favorites are probably broccoli, bell peppers, and tomatoes.

If you have a damp part of a yard, you might want to grow Jerusalem artichokes (sunroot/ sunchokes/ fartichokes). They are a perennial "invasive" food plant that makes tiny potato-like tubers.

Fermentation removes the fart making gases. And makes them more nutrients!

(One level teaspoon of non iodine salt per quart.)

Or you could cook them for similar effect. But if you eat a lot of them you might fart a lot.

Instead of sugar, they have inulin(sp?) witch is good for gut bacteria.

They look like very tall, small sunflowers. While the stalks and flowers are not good food for people, chickens like them.

To "manage them" pull up in spring if they leave their designated area...

They are drought resistant but do better with lots of moisture.

I don't understand why my religious beliefs are relevant in this discussion. The health benefits of eating a variety of vegetables are well established by scientific research, regardless of religion.
 
I like Gherkins and pickled onions. especially on ham sandwitches.

Btw Hindus were ahead of their time. Hindu texts have traditionally promoted vegetarianism as a way of life, not just a dietary choice, because they emphasize the spirituality of all living beings and the importance of non-violence and compassion towards other creatures.
 
I like fermented Brussel sprouts! I cut them in half first before the fermentation.

it seems it's not too bad to eat as long as you wash them thoroughly and peel them, which I always do beforehand
