Realistically without a body the soul would not have a physical identity.
So when we are born we are playing the characters of the meat suit we were put in.
You're given a name, a family, a specific place to live, and a time in which you are born.
All of these shape and create what you can do in life. Forming a personality and beliefs.
Each body has their own personal tastes and satisfactions. That's why you can't realistically decide what you like or what you don't because it's already pre chosen for you.
Upon shedding our skin (death) we gain and keep the experience of each life we have lived.
Only to get our memory wiped again and put in a new body so as to have the delusion that we are first arriving here.
