Let's assume you are 5'9 as a base you can either choose 8/10 face or 6'11 height and keep you're normal face.

I don't understand this. Height has many more advantages than face. Men treat you with greater deference, you can put on more muscle mass, and you out earn others in your lifetime, because you're more likely to get promoted, because monkey brain see big tall man and think big tall man strong and good leader.
Face makes you pretty to women and seem harmless to other men. It's objectively inferior, all things considered.

Also the health issues at that height are insane. Users here never even think deep enough to consider that. Even men that are a few inches above average height die significantly earlier than average height men. But at that extreme of a height you won’t just die a little faster, it will be a lot faster and you are more likely to have deformities
