The amount a farmer needs compared to how much he produces is quite small, especially with modern irrigation techniques and such.

Not everyone grows potatoes and you can't live off of potatoes alone. You need a bunch of stuff to live which is not even related to the nightshade family.
we grow our own wheat and rice and eat it for a year , it doesn't even tak half an acre to produce that.

it's hella difficult with climatic challenges and increasing taxes and expensive power to grow them . Excluding the money part, it still takes a lot of effort and expertise to grow them .
