Just Cause 2 - Open world sandbox in tropical setting. Could grapple everywhere, really felt like a super hero in that game without any mods. Played the demo on PS3 and bought full game when it came out, rare for me to do that but was so good at the time.
Probably put most hours into skyrim though, i liked feeling powerful when someone would talk bad to me i'd be like you talking to me then own them.

Night In The Woods. The politics are a little too left leaning for my tastes but it's a good meditation on the life of a socially retarded virgin neet who dropped out of college. Reminds me of myself.
King Arthur's Gold for it's brilliant multiplayer combat. Too bad it's pretty much dead now.
Undertale because it's a great synthesis of sight and sound and it's bullet hell mechanics revitalizes the rather drab turn based nature of JRPGs.
Read Dead Redemption 2 might be up there soon, I'm really enjoying my time with it.

I'm not sure I have one, I've played too many games. Judging based upon how much time I've spent on a game, probably either Crusader Kings 2, Mount&Blade Warband, or Planetside 2.
Of course it's not really that simple, as not all hours on a game are going to be equal in quality. But aside from that, I can't really say as I've played so much stuff in the past, and I'd probably forget games that aren't in relatively recent memory.
