Here is a healthy meal that is so quick and easy to prepare it becomes a sustainable habit. It is also very cheap and tasty.
Ingredients:
- 4x handfuls of mixed frozen vegetables
- 1x can of chickpeas or black or cannellini beans
- 1x stock cube
Method:
Add vegetables and stock cube to pan.
Rinse beans and add to pan.
Boil water and add to pan.
Bring to boil and then simmer for 20 minutes.
Optionally blend soup to your preferred consistent.
Please note that this soup can't be frozen as the veg have already been frozen. I'm sure you'll eat it all in one sitting anyway.
