It's not easy. The only reason why it's considered 'easy' is because you can fuck around a lot and farm souls before getting into the difficult boss fights like Margit and Godrick

And because of that, you can be overleveled for the fights which make them piss easy. there are plenty of ways to cheese fights as well.
