Hardware Unboxed has been exaggerating the importance of VRAM for years now because they're AMD employees, but agreed that 8GB is really pushing it with a $400 GPU.

60 series cards are shit, just pay up and buy a 70 series card. My 4070 Super runs everything fine, i just wish i had a better cpu, i might upgrade that in a few years. The AMD shills are always crying about 12 GB VRAM, how would they know how much VRAM will be needed for newer games? Nvidia knows how much VRAM you need to play games, worst case you can just lower your settings when new games come out

Yes, lower settings. If you're buying a mid-range GPU, you can't expect to play everything in ultra settings. That's what the 5090 is for.
60 class GPUs can play 99% of games at 1080 with 60 fps with medium-like settings. Demand has gone through the roof with gamers lately.
