I believe its because most people haven't established their own thinking system, so they rely on others to do the thinking for them. Labels are a way to remove all intricacies from a group that you are not apart of to make describing them as straightforward as possible. Of course that wouldn't be an issue if more people had better sense of empathy but oh well.
