People don't really play the GTA games for the story, anyway. For much of the people who play these games, most of the hours spent on it is on the multiplayer (certainly this was the case for GTA IV and GTA V) or even regarding the single-player, just doing various things after they've completed the main story which doesn't take long to do anyway. So not playing the game at all over the story doesn't make any sense, if you would play it otherwise you're just missing out on playing multi-player with other people for a reason as petty as that.

I have more than 500 hours in GTA 5 story mode and I have never played the online

Honestly if playing online was something you were interested in, I doubt the money that costs would be an impediment. It seems that at least for GTA, you simply aren't interested in playing online.

They're good games by any general metric, but they're not really for me because as you implied they are made from the ground up for a lowest common denominator normie demographic.

I think I have some interest in playing Red Dead Redemption 1 and 2. They're pretty cool games, the developers did a lot of research on American history to make everything the way it is. I have less interest in GTA, at most would do a quick run through of the campaigns of GTA IV and GTA V. Even there, I find it interesting how much research they did for the real cities the games are based on to get everything the way it was. But I could never play the games as general entertainment.

To be honest, I don't really like video games at this point that much in general. The ones that hold my interest have to have some value that extends beyond merely being a passive entertainment product, whereas most people are the opposite. (they mainly play the game for something to do, and it being interesting beyond that is a bonus.) Accounting for all games across all generations and platforms, there are of course plenty of games with great stories and interesting worlds. (even though most video games definitely suck.) I would definitely qualify Rockstar games as having very cool worlds, and that is the main appeal for me. Of course, the story, not so much.

I might as well give an example of a game that really is intriguing: the first Bioshock. And while it's really not that great, (I lately question if any video game is) it definitely rightfully is considered a classic in terms of story and world-building in the medium. I've also heard great things about Bioshock Infinite, it's just a shame the game was compromised from its original vision in development to be the same on the PC and console versions.

It is, it's just a re-hash with better graphics, new story and locations, and more bells and whistles.

Once you realize the main driving appeal which each new game in the series, (especially this one) is just better graphics technology, and this is also what makes the game so long to come out, it really loses all possible appeal. All that time and money just so the game can have better graphics. Compared to how long it takes to make the graphics, making the actual game part is like nothing. If the graphics were even just what they were last generation, in the time it's taken them to make this they could've made several games over.

I'd rather have developers not care about graphics and make more interesting games more frequently, but I'm obviously in the minority there. And this is part of why I don't even play games anymore.

This is obviously what normies want, because GTA VI will literally be the biggest/most lucrative entertainment product launch in history. So it's just supply and demand.
