What I don't understand is we have all this alarmism about warming, but the historical temperature records show much higher temperatures and higher variations than we have today.

Afaik the main chunk of climate science relies on models that simulate temperature increases due to atmospheric co2 and posit future temperatures based on increasing carbon emissions from the last 50 years. Or they simply look at the last 50 years of increasing temperature and claim its a dramatic change - a bit like looking at the price of a stock hour by hour, rather than by year or decade.

Unfortunately climate science is like the holocaust - you tow the line, if you deny it or question its validity you get arrested.
