I don't want to be an armchair keyboard warrior here, but this is one of the more easier assailants to handle armed with a knife. He literally has one stabbing motion and it's the easiest, most telegraphed one. You can tell this is his first stabbing.

What the hell? The guy couldn't just launch a strong kick to tip over the stabber? The stabber was literally in an unstable stance. One powerful kick can send him to the ground, and then you can step on the guy's knife hand and disarm him.
